For 5 servings.
Prepare sweet and sour sauce as indicated in prior recipe. But make twice the
suggested quantity.
MEAT:
2 lbs pork tenderloin cut into 1/2 inch square
1 teaspoon salt
a dash of pepper
1 garlic clove, well mashed
10 tablespoons all purpose flour
1 lightly beaten egg
VEGETABLES:
1 cucumber, quartered and sliced diagonally
1 small carrot, minced
1 belt pepper cut into 1" x 2" pieces
1/2 cup cauliflower cut into 1" x 2" pieces
1 large onion cut into 8 pieces, lengthwise.
Season the meat with salt, pepper and garlic. Mix the flour with
beaten egg and 2 tablespoons water to make a paste. Blend in flour mixture and
pork meat pieces.
Fry each piece of pork meat separately in deep fat until golden brown.
Heat the pan, add 2 tablespoons cooking oil and sauté the vegetables for 3 to 5
min (do not overcook). Combine meat and sautéed vegetables. Add sweet and sour
sauce just before serving.
Serve with plain rice
