Shrimp, Onions, and Bean Sprouts Balls

Ethnicity: Vietnamese

  • 1 cup shrimp, fresh or frozen (uncooked)

  • 1 cup bean spouts, coarsely broken

  • 1/2 cup onions, cut lenghwise or chopped

  • 1 teaspoon salt

  • A dash of pepper, black or white

  • 10 tablespoons all purpose flour

  • 1 egg

Beat the egg. Beat in wheat flour by the tablespoon and add 2 to 3 tablespoons of cold water to make a paste. Add remaining ingredients and form into balls.
Fry in deep fat at 374F until golden brown. Keep warm in the oven on paper towels until ready to serve. Serve hot with lettuce (bib or romaine) and sweet and sour sauce.

Sweet and sour sauce

  • 1/3 cup vinegar

  • 2/3 cup water or bouillon

  • 2 tablespoon corns starch

  • 2 tablespoons sugar or more if desired

  • 3 tablespoons soy sauce

  • 1/3 cup equal parts of ginger, onion, and radishes, thinly minced

  • 3 to 4 slices hot red pepper, if desired

Dilute the cornstarch and sugar with water or bouillon. Add vinegar and soy sauce. Cook stirring over low heat until the cornstarch thickens. Add remaining ingredients just before serving. Serves 4
