Saigon Spiced Beef Stew

Ethnicity: Vietnamese

Serves 4 to 6:

  • 2 lbs of stew beef (spare ribs or chuck)

Spices:

  • 4 teaspoons soy bean paste

  • 4 teaspoons salt or less if desired

  • 2 teaspoons sugar

  • 1/2 teaspoon cinnamon powder

  • 1 drop citronella essence

  • 1 whole clove (or 1/4 teaspoon clove powder)

  • 1 teaspoon chopped ginger (or 1/2 teaspoon ginger powder)

  • 3 cloves of star anise (or 1/2 teaspoon anise powder)

  • 6 garlic cloves, minced

Cut the meat into cubes, add spices and let stand for 15 minutes. Heat pan, add 4 tablespoons oil, and brown meat. Add 4 cups hot water and remaining ingredients. Simmer covered for 2 hours or until tender. This can be also cooked in the oven, covered at 300F for 2 hours.
Add 3 tablespoons tomato sauce before serving
Serve with rice or noodles and salad
