Raw Beef Salad

Ethnicity: Vietnamese

Serve 4 to 6:

Prepare 1 cup sweet and sour salad with finely chopped onions, radishes, celery

2 cups tender beef thinly sliced against the grain

Sauté the meat for a few seconds in the marinate:

  • 1/2 cup beef coup stock

  • 1/2 cup water

  • 1 chopped garlic clove

  • 1 bouquet garni composed of 3 sprigs each of parsley thyme, 1 bay leaf

Pour 2 tablespoons mashed, roasted peanuts and 2 tablespoons seasoned fish sauce over the combined cooked meat and sweet and sour salad.
