This recipe can be done when
fresh shrimp and sugar cane are available. Ingredients need are as follows:
2 lbs very fresh shrimp, large size
4 ounces pork fat
10 garlic cloves
teaspoon salt
3 teaspoon sugar
sugar cane
Quarter the sugar cane lengthwise and cut crosswise to make 20
pieces of about 5" long.
Shell and clean the shrimp. Drain
Cur pork fat into small strips about 2/3" long
Add sugar and let stand 30 minutes in a warm oven.
Mash shrimp and garlic cloves well with meat grinder, or mallet, combine mashed
shrimp and pork fat and season with salt
Dip your fingers into cooking oil to prevent them from sticking to the mixture,
then take about 3 tablespoons of the mixture and put around the sugar cane
pieces in the middle 3 inches
Charcoal over medium fire or bake in the oven at 350F for one hour. Do not allow
the shrimp paste to touch the baking dishes or the barbecue grill.
Serve with lettuce or salad and nuoc mam
To serve as hors d'oeuvres prepare the shrimp mixture as described above from in
balls 1" diameter and place over end of 2" length of sugar cane
